Inspiration

Recently, Phillip and I moved out of the city and into the country. We are absolutely loving the tranquility of the space we have but are sure missing some of our favorite restaurants downtown. Even before we moved we cooked at home 5-6 nights a week. But on occasion we loved take out from our favorite Thai spot in Hampden. Every time we ordered, we had to get a double batch of their Pork Spring Rolls. Since we are too far for our last minute take out we decided to recreate these at home and are in LOVE with these Air Fryer Pork Spring Rolls.

Tools Needed

Air Fryer: While this tool is not necessarily needed to make these Pork Spring Rolls, we do love how crispy these come cook in the air fryer.

Ingredients

Ground Pork: Pork is a great source of protein and perfect to use in our spring rolls. The fats will cook out and help blend all the other ingredients together.

Chives and Cilantro: Chives add the needed onion flavor inside of our spring rolls. The cilantro adds that lemon freshness that the spring roll needs.

Ginger: The ginger gets cooked down with some of the fats from the pork and mixed to make a great flavor.

Egg Roll Wrappers: We tried using cabbage itself as the wrapper, but it just wasn’t the same. You gotta go with the original egg roll wrappers

Thai Chili Paste: Garlic and Thai chilies… It’s the flavor punch you need.

Coconut Aminos: Very similar to soy sauce (use soy as a substitution if needed). Coconut Aminos are made from the sap of the coconut plants.

Step by Step

To start making these Air Fry Pork Spring Rolls start with the sauce. In a sauce pan over medium heat add a tablespoon of sesame oil and the minced garlic. Let the garlic become fragrant and add in the chili paste and hoisin. Bring to head and add in the beef broth and coconut amino mix well and bring to a simmer. Slowly whisk in the brown sugar and cook on low for about 10 minutes before removing from heat and letting cool.

Next create your Pork Filling by adding the ingredients into a bowl. This includes, ground pork, minced green onion, grated ginger, minced chives, chopped cabbage, cilantro. Mix well, once your sauce is completely cool, add in a cup of the sauce to let the pork filling marinate in. Cover the bowl in plastic wrap and stick in the fridge for at least and hour. Remove from the fridge, mix well once more, strain out the extra sauce, and begin assembling the spring rolls. Scoop the pork filling onto the egg roll wrapper and tap some water on the edges of the wrapper. Wrap the spring rolls up like a burrito and set aside. Preheat the air fryer to 375 degrees. Spray the base of the air fryer and place your egg rolls on the pan. Spray a little more oil on top of the egg rolls and place in the fryer for 12-15 minutes. Half way through flip the egg rolls. Serve with the other half of the spring roll sauce!

From our kitchen to yours, cheers!
