Who does not love avocado toast? Um, no one. Maybe people who are allergic. But come on, avocado toast has been one of the biggest fan favorites in the last decade. People are putting avocado on everything. I’ve seen avocado brownie recipes, avocado smoothies, and even sauces… The list goes on. We made avocado toast 3 ways to show you all our favorites!

We typically make avocado toast every morning with a few sprinkles of our Everything Bagel Seasoning and eggs. Some days we add prosciutto to the toast as well to give this a little extra salty flavor. While these pictures look oh so pretty, most of the time we just smash up the avocado and add it to toast.

While we do show this avocado toast 3 ways, most days we make hard boiled eggs because they are very simple to make. But if you have a little extra time sunny side up eggs or over easy is even better. Once you break into the yolk and let it soak up in the bread you won’t be able to put this down!

Avocado toast with eggs and strawberries

On the weekends or for an afternoon snack we like to top our avocado toast off with strawberries and balsamic glaze. A glass of wine goes great with this too! We don’t add any seasoning to this as the strawberry gives off a ton of flavor. Make sure to not over load the toast with avocado when you add the strawberry. The mix of flavors is wonderful but you want to make sure you get all the flavors.

If you want to add the mint (highly recommend) make sure to give the mint a good smack to activate the flavors. It sounds silly but it really works! The mint adds a nice cool mix to this toast.

Avocado Toast 3 Ways

Ingredients

  • 3 slices sourdough bread
  • 2 avocados
  • 2 pieces prosciutto
  • 2 eggs hard boiled
  • 1 egg fried
  • 2 tsp everything bagel seasoning
  • 3 strawberries sliced thin
  • 2 tsp balsamic glaze
  • mint for garnish

Instructions

Avocado Toast with Hard Boiled Eggs

  • In small pot add water and boil
  • Add two eggs to the boiling water, reduce heat to medium and cook 8-10 minutes
  • Toast bread in toaster to your liking
  • Slice avocado and spread onto bread. Sprinkle a tsp of everything bagel seasoning on top of the avocado
  • Remove eggs from boiling water and rinse under cold water to cool
  • Once cooled, peel eggs, slice thin and spread on top of the avocado

Avocado Toast with Sunny Side Up Egg

  • Toast bread in toaster to your liking
  • In frying pan add small amount of oil over medium heat
  • Crack egg and slowly add to pan to not break and run
  • Once toast is ready, slice avocado thinly and spread on top of toast
  • Sprinkle 1 tsp of everything bagel seasoning on top of avocado
  • Take slices of prosciutto and lay on top of avocado
  • Once egg is cooked, remove carefully from pan with spatula and place on top of the prosciutto

Avocado Toast with Strawberries

  • Toast bread in toaster to your liking
  • Slice avocado thinly and spread on top of bread
  • Slice strawberries thinly and spread on top of bread
  • Drizzle balsamic glaze over the strawberries and garnish with mint leaves
  • Be sure to smack the mint leaves to activate before adding to the toast
