Nachos

Who can even watch football without nachos? It might as well be a sin. These nachos pack in the flavor with both ground beef and steak. While many people love chicken nachos we didn’t want to stray away from the traditional beef nachos. Extra cheese of course. Use a cast iron skillet so you can easily make this and serve to guests! Buffalo Chicken Bombs

Buffalo chicken is pretty much a football staple. That is because I will eat the entire thing in one sitting without letting Phillip have a bite. Bad, I know. But to ensure we share we started making these buffalo chicken bombs and WOW they were a hit. The buttery taste you get from the biscuit makes all the difference. Try is out for yourselves with the recipe at the bottom of the page. These are sure bomb at your party (in a good way!).
Loaded Baked Potato Skins

Potatoes, can I say more? They are so versatile, and let’s be real, AMAZING. I don’t really have any objections of how they are made, I will eat them. We make loaded potato skins for any game, sometimes we will make our loaded baked zucchini skins instead to get a healthy twist on the dish. Either way you make this, load ’em up! The more bacon and cheese the better! The recipe below might call for a certain amount but PLEASE add more!

Nachos
Ingredients
- 1 lbs ground beef
- 1 tbsp chili powder
- 1 tsp salt
- 1 tsp pepper
- 1 tsp cumin
- 2 garlic cloves minced
- 1 cup steak
- 2 peppers sliced
- 1 onion sliced thinly
- 2 tbsp olive oil
- 1 can black beans drained and rinsed
- 1 jalapeno sliced thinly
- ¼ cup cilantro
- 3 cups cheddar cheese
- ¼ cup green onion
- 1 lime
- tortilla chips
- guacamole
- sour cream
Instructions
- Preheat oven to 450°
- Cook steak to medium rare and slice thinly , set to the side
- Cook ground beef with chili powder, cumin, garlic, salt, and pepper
- Once cooked, drain well and set off to the side
- Saute peppers and onions in olive oil until browned
- Once cooked set to side and take out cast iron skillet
- Add a layer of tortilla chips to the bottom of the pan
- Add shredded cheese, peppers, onions, steak, ground beef, jalapeños, black beans, green onion, and cilantro
- Add tortilla chips and layer 2-3 more time depending on how you want your nachos
- Bake in over for 10 minutes or until cheese is melted
- Remove from oven, garnish with cilantro, sour cream, a squeeze of a lime, and guacamole

Buffalo Chicken Bombs
Ingredients
- 2 chicken breasts
- ⅔ cups shredded cheddar cheese
- ½ cup buffalo sauce
- 1 tbsp ranch dressing
- 1 tsp parsley
- ¼ red onion chopped
- 1 package of biscuits
- 2 tbsp butter melted
Instructions
- Preheat oven to 350°
- Salt and pepper the chicken, drizzle in olive oil and bake for 30 minutes or until they reach 160°
- Shred chicken and add to large mixing bowl
- Add buffalo sauce, cheddar cheese, parsley, red onion, and ranch dressing. Mix well
- Take individual biscuits and roll thin with a rolling pin
- Fill each biscuit with chicken mixture and pinch closed. Make sure to completely seal the biscuit and that all areas are well pinched. This will prevent them from opening up in the oven
- Brush melted butter in biscuits
- Bake for 15 minutes or until golden brown
- Garnish with additional parsley and serve with ranch or blue cheese!

Baked Potato Skins
Ingredients
- 4 potatoes of your choice
- 1 cup cheddar cheese shredded
- 2 tbsp butter melted
- ⅓ cup bacon bits
- ⅔ cup sour cream
- 2 green onions chopped
- 1 jalapeno sliced thin
- salt
- pepper
Instructions
- Preheat oven to 450°
- Use a fork and create punctures in each potato
- Wrap wet paper towel around each potato and microwave 5 minutes
- Flip potatoes in microwave and cook 5 more minutes
- Slice potatoes in half length wise
- Scoop out potato inside from each half creating potato shells. Leave a little bit of potato on the sides and bottom to keep shape
- On baking pan brush potatoes with butter and sprinkle salt and pepper over potatoes
- Bake for 10 minutes and add cheese to potatoes
- Bake for an additional 5 minutes or until cheese is melted to your liking
- Top potatoes with sour cream, green onion, bacon, and jalapeños. Serve hot
