Inspiration

Phillip and I love a good one pot meal. Really, who doesn’t? With the baby on the way we knew we needed to step up our game on creating recipes that can be made and cleaned up quick! This Creamy Garlic Chicken and Potatoes comes together in 30 minutes or less and only requires one pot to make. With the grocery store prices rising higher and higher another goal was to make this on the cheap while still using fresh ingredients. It’s hard to beat a $15 meal for your family.

Tools Needed

There are not specific tools needed to make this recipe other than a sauté pan or dutch oven large enough to fit everything in one pan/pot.

Ingredients

Chicken: When sautéed in butter, chicken is just so juicy! Add some garlic and shallots and you have a fan favorite in our house.

Garlic & Shallots: The mix of both garlic and shallots gives the perfect spice and sweet flavor to this dish.

Seasonings: The seasoning blend in this Creamy Garlic Chicken and Potatoes dish gives you just the right herby flavor while not overpowering the creamy garlic flavor you are here for.

Milk & Butter: Like I said earlier, what is better for chicken than butter! Dairy has a home in this dish to amp up the creaminess and mellow out the potent flavors from the seasonings.

Step by Step

To start making this Creamy Garlic Chicken and Potatoes, add your sauté pan or dutch oven over medium heat. Put the butter in the pan and let melt before adding the garlic and shallots. Let the garlic and shallots become fragrant and then add in the cubed chicken. Next add in the salt, pepper, thyme, oregano, and paprika. Mix well to evenly coat the chicken.

Sauté for about 5-7 minutes and then add in the milk. Bring to a simmer and add the potatoes and carrots. Mix well, put a lid on the pan and let cook 7 minutes before opening the lid, mixing well and taking off heat. At this point the milk should be fully absorbed into the chicken, potatoes, and carrots. Serve and enjoy!

  • 2 chicken breasts cubed
  • 6 garlic cloves minced
  • 1 shallot finely chopped
  • 1 lb baby potatoes sliced
  • 4 carrots peeled and sliced
  • ¾ tsp oregano

  • tsp paprika
  • tsp salt
  • ¾ tsp pepper
  • ¾ cup milk
  • 3 tbsp salted butter

Instructions
