Mediterranean Nachos

Every fall Phillip and I start craving nachos like no other. This year we decided to switch it up from our Baked and Loaded Nachos and make these Mediterranean Nachos. The result was better than we ever imagined. Using both pita chips and fresh pita bread, we were scooping up goodness with every bite. Check out the recipe below and let us know what you think!

Inspiration

As I mentioned above, we are big nacho fans. Honestly, who isn’t though? We love out Classic Baked and Loaded Nachos, switch it up from time to time with our Chicken Pancetta Ranch Nachos, and at least monthly we make our Nacho Taco Potatoes. So it’s safe to say that we aren’t lacking in the nacho department, but nachos are a food group that is alway worth exploring more. We decided to take a fresh approach with some of our favorite mediterranean inspired flavors and foods. We ended up with a delicious platter of tasty nachos made from some of our other favorite recipes!

Tools Needed

Blender/Food Processor: In order to blend the Spicy Feta Dip you need a blender of some sort. But if you opt to skip the Spicy Feta Dip on these Mediterranean Nachos and just sprinkle feta on top, you don’t need any special equipment.

Ingredients

Chicken Marinade: We use a blend of paprika, garlic powder, onion powder, cumin, turmeric, parsley, and gochugaro. This might not seem like your typical combination of Mediterranean flavors, but give it a try and you will be surprised.

White Beans: A nutty flavor is desired in these nachos and white beans will add just that flavor!

Feta Cheese: What are nachos without cheese? Well this time we want a saltier flavor. Even better if you choose to turn your feta into our famous Spicy Feta Dip!

Tzatziki: Dill and garlic are the shining stars in this dip and is a must have on these nachos. It’s like the sour cream to your classic nachos.

Roasted Red Peppers: Light and charred to be chopped up and sprinkled on top. These peppers will keep the light flavor mediterranean food tends to have.

Hot Peppers & Pepperoncini: Kick it up a bit and add some spice to your nachos with hot banana peppers and my favorite, pepperonchini.

Step by Step

To start making these Mediterranean Nachos, start by mixing up the chicken marinade. Next combine the marinade and chicken breasts into a ziplock bag and let rest in the fridge for at least 30 minutes. Next, if you are choosing to make the Spicy Feta Dip, add all of your ingredients to a blender and blend until smooth.

Feel free to grab a container of Tzatziki or make our Dill Tzatziki next. Chop up the dill and garlic, add it to a bowl and mix with lemon juice, greek yogurt, and salt. Now that all of your chopping and mixing is done grill up or pan sear your chicken breasts. You can even cook the chicken in your air fryer too! Once the chicken has an internal temperature of 165 degrees from the chicken from the heat and let it rest a few minutes.

Time to construct your nachos, first lay down your pita chips and fresh pita bread. Start adding your toppings, white beans, banana peppers, roasted red peppers, pepperoncini, tzatziki, and spicy feta dip! Lastly, chop up your chicken and add on top. These nachos are now ready to serve!

Mediterranean Nachos

Mediterranean Nachos, made with grilled chicken, tzatziki, spicy feta dip, roasted red peppers, banana peppers, and so much more!

Ingredients

Grilled Chicken

  • 2 chicken breasts
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp cumin
  • ½ tsp gochugaru
  • ½ tsp turmeric
  • 2 tbsp parsley
  • 1 lemon juiced

Spicy Feta Dip

  • 10 oz feta cheese
  • 4-5 tbsp olive oil
  • 3 cloves garlic
  • 2 roasted red peppers
  • 1 ½ tbsp red wine vinegar
  • ¼ tsp crushed red pepper

Nacho Ingredients

  • 1 bag pita chips
  • 2-4 fresh pita bread, sliced
  • 1 can white beans, rinsed and dried
  • 1 handful hot banana peppers
  • 1 handful roasted red peppers, patted dry and chopped
  • pepperoncini
  • 1-2 scoops tzatziki

Instructions
