Perfection in a wrap or better known as Mojo Steak Burritos. These burritos may seem a little daunting to make but let me assure you, they are well worth it! This dish is on the pricier side because of the steak but still comes in at less than $10 per person. For a family of 4 this dinner costs $37.50! Inspiration
Like so many of our meals, these Mojo Steak Burritos came to be after I left Phillip in charge of dinner one night. Exhausted in my third trimester of my pregnancy I tasked Phillip with making dinner so I could sit down and relax. I told him I took a steak out, thinking he will grill up a steak and some veggies. Well, about 30 minutes later we were finding out who was the better burrito roller. Everything about this burrito is fairly basic except the mojo added on at the end, it is spectacular! Still, not a complicated recipe but when those flavors all come together, fireworks in your mouth! I promise you!
Tools Needed
These Mojo Steak Burritos only require a good sauté pan and cutting board.
Ingredients
Steak: We find that a cut of beef really pairs best with the mojo, however this recipe would likely be just as good with some chicken instead.
Cilantro: This burst of fresh flavor mixed with the lime juice really makes the mojo pop. While you can substitute this out for parsley if you are not a cilantro fan, it is just not the same. Cilantro fan or not, you should give this a go before substituting for a different herb.
Garlic: Needed to bring a bit of bitter to the mojo, garlic does just the trick!
Lime Juice: This acid is the perfect addition to the mojo that is added to these Mojo Steak Burritos. If you are out of lime juice, you can substitute with lemon juice for a similar flavor.
Peppers, Onions, & Potatoes: What is a burritos with out these items?

Step by Step
To start these Mojo Steak Burritos get to chopping! The best way to make any recipe is to prepare before the cooking begins. Chop up all your peppers, onions, cilantro, potatoes, and garlic. Set aside to add to the various parts of this recipe. Next mix together the mojo: lime juice, salt, cumin, minced garlic, garlic powder, olive oil, and cilantro. Let sit on the counter or in the fridge to marinate together. Lastly, take your chopped potatoes and mix in a bowl with a few dashes of paprika, salt, pepper, and garlic powder, then add in a tablespoon or so of oil and mix.
Now that the mojo is done, mix together the ingredients for the adobo sour cream: sour cream, chilies in adobo, lime juice, and salt. Mix well, cover, and let rest in the fridge until you are ready to use it. Now that the prep work is done for these Mojo Steak Burritos, it’s time to start cooking! Bring your grill or grill pan on a stove to a medium heat and sear the steak. Cook to your desired steak temperature. While the steak is cooking toss the veggies and potatoes on a grill pan on the grill or sauté them on your stove top over medium heat for 15 minutes until potatoes are roasted and softened. When steak has reached your desired temperature remove from the grill or grill pan slather half of the mojo on top of the steak. Let rest half the cook time before slicing. Slice thinly and let the mojo juice soak through each slice, once sliced add the reminder of the mojo on top of the sliced steak.
Time to build your burrito! Take a wrap and slather the adobo sour cream on the bottom, add the peppers, onions, and potatoes next. Place a few slices of steak on top of the veggies and garnish with a dollop or two of guacamole before rolling that bad boy up!
