Nugs. Need I say more, okay, Nuggets and Sweet Sauce. Well, however you call them, Nugs are some of the best food on the planet. During the week Phillip and I eat healthy, work out, and try not to drink any alcohol. But sometimes this makes us really go nuts on a Saturday and binge on some Chick-fil-a. And there is no shame at all in that. However, we wanted to create a version for ourselves that were easy, quick, and ABSOLUTELY ADDICTIVE. And without tooting our horn, we did just that.
Nugs & Sauce
- 2 chicken breasts cubed
- ¾ cup almond flour
- ½ cup flour
- ½ tbsp salt
- 1 tsp garlic powder
- 1 tsp pepper
- 1 tsp onion powder
- 1 tsp cayenne pepper
- 2 eggs
- ¼ cup mayo
- 2 tbsp yellow mustard
- 2 tbsp barbecue sauce
- 2 tbsp honey
- 1 tbsp hot sauce
- ¼ cup sandwich pickles chopped
- Preheat oven to 425°
- Mix together all dry ingredients into a bowl and mix well to remove all clumps
- In a large gallon zip lock bag add two eggs and scramble them
- Add the cubed chicken to the bag and coat the chicken well
- Pour out any extra scrambled eggs and pour in the dry mixture
- Shake the bag well
- On a baking sheet with a rack add the chicken nuggets
- Bake for 15-20 minutes or until chicken reaches 165°
- Mix together all ingredient and let chill in fridge until serving
Inspired from Chick-fil-a’s spicy chicken, we made the perfect breading to coat the little cubes of perfection in. Just enough spice to make you dip a little more into that sauce. And the sauce, YUMMM. We were going for a mix between Chick-fil-a sauce and animal style In-N-Out sauce. If you want want to use all almond flour or all regular flour, be our guest. But we have found that the almond flour adds an extra flavor profile to the chicken as well as giving it a bit more texture. Almond flour is typically grainier by nature.
Can these be fried?
YES. DEFINITELY, YES. We baked these Nuggets and Sweet Sauce because we were going for a little bit of a healthier alternative than going to Chick-fil-a. But, we have for sure made these nugs fried. In a pot or dutch oven, bring oil to 350 degrees. Slowly add chicken into the oil and fry the chicken until they are golden brown and internally 165 degrees. Remove from oven and lay out on paper towels or a paper bag. Kitchen hack: paper bags, like the thick grocery store ones are the best for absorbing grease and leaving your fried food perfectly crispy.
No breading, no problem
If you are looking to make these Nuggets and Sweet Sauce without breading, we are on board. We do this all the time to make nugs for wraps or to add to salads. Just use the spices as a seasoning with avocado or olive oil and then bake just the same.
