Nothing makes me think of summer more than juicy pineapple. These Pineapple Chicken Bowls are the perfect sweet and savory combo to make on these warm nights. Now all I need is an umbrella drink and I’m set for this tropical dinner! Check out the recipe below and let us know your thoughts.

Pineapple Chicken Bowls
Ingredients
Chicken
- 2 chicken breasts cut into cubes
- 2 tsp sugar
- 3 tbsp rum
- 1 cup pineapple roughly chopped
- 1 tbsp lime juice
- 3 tbsp soy sauce
- 2 tbsp sesame oil
- 2 tsp salt
- 1 cup broccoli roughly chopped
- 1 red, yellow or orange pepper diced
- ½ yellow onion chopped
- ½ tsp garlic powder
- 1 tsp pepper
Toasted Sesame Rice
- 1 ½ cups jasmine rice
- 2 tbsp sesame oil
- ½ tsp chili powder
- 3 cups water
Instructions
Pineapple Chicken
- Heat pan with 2 tbsp sesame oil over medium heat
- Once hot, add chicken and cook through
- Once chicken is cooked, drain the chicken juice and set the chicken aside
- Heat pan over medium heat
- Once heated add the soy sauce, sugar, and rum. Let sugar dissolve
- Once dissolved add lime juice, 1 tsp salt, and pineapple and let simmer
- Once pineapple is softened add chicken back to pan and mix well.
- In separate pan saute the broccoli, peppers, onions, 1 tsp salt, pepper, and garlic powder
- Saute until softened and add to the pineapple sauce with the chicken
Toasted Sesame Rice
- Heat large saute pan or wok with 2 tbsp sesame oil
- Once hot add rice and chili powder and mix rice well so it is all coated by the oil
- Let rice toast. Once toasted add rice to boiling water and let cook down until fully done
- Serve the pineapple chicken over the toasted sesame rice and enjoy!

Pineapple, rum, and lime juice may sound like an odd combination but I can promise you it is AMAZING. Let’s think about this, Rum Punch, Pineapple Breeze, the list of delicious drinks go on. Phillip and I love to experiment with cocktails and when making a fresh Rum Punch we could not stop talking about how well the flavors go together and how yummy it would be on some chicken. Add the Rice
We chose to add rice to these bowls after a long debate on rice, barley, or cauliflower rice. Cauliflower rice is the perfect substitute for many dishes but we really wanted to have something that would soak up the extra juices from this dish. The barley would give off too much crunch and a little bit of flavor itself so we decided to go with your standard jasmine rice for this Pineapple Chicken Bowl.

Now some Veggies
You can add any type of veggies you prefer to this meal but we recommend something with a crunch. Broccoli is always a favorite of ours because the flavor isn’t over powering and will take on some of the pineapple sauce. Peppers and onions can only enhance a dish too. Mixed well with the other ingredients in this meal and your have the perfect weeknight dish that will transform any night into a tropical dinner in paradise.
