Pineapple Shrimp Tostadas

Summer is upon us everyone! Pineapple is one fruit Phillip and I can’t get enough of in the summer. It’s so fresh, sweet, and bursts of juicy flavor! Blended down with fresh herbs and veggies to make the perfect sauce for shrimp, chicken, pork, or even veggie kabobs. Try these Pineapple Shrimp Tostadas out for yourself and let us know what you think!

Inspiration

As I mentioned above these Pineapple Shrimp Tostadas were inspired by the summer season rolling in. Feeling the weather changing and the temperature warming up each day makes me think of all the fresh fruits and vegetables that are coming into season. While pineapple is not yet in season, I got ahead of myself and have been starting to get a fresh pineapple every week for a smoothie bowl, afternoon snack, or a dessert with a little chocolate drizzled on top. With the pineapple looming in the fridge as I perused trying to decide on dinner for the night, the recipe just called out to me. We always keep frozen shrimp in the freezer for an easy weeknight meal and the best part is that from frozen to thawed, shrimp only take about 15 minutes. From 4:30pm determining what to eat to 5:30 sitting down at the dinner table, Phillip and I claimed this a winner.

Tools Needed

Immersion Blender or Blender: You will need a blender or immersion blender to puree the pineapple sauce together.

Ingredients

Shrimp: We love shrimp with this pineapple sauce because of how well it takes on the flavor. You can substitute chicken or pork as well. We have also let some veggies like peppers, onions, and zucchini sit in the sauce for about 15 minutes before skewering them and grilling.

Pineapple: The creme de la crop of juicy fruits, in my opinion. The tropical flavor transports you to a white sand beach smelling the salty air around you.

Parsley: Parsley or cilantro will work in this Pineapple Shrimp Tostadas recipe but we chose parsley because it is a little less severe a flavor than cilantro and allows the pineapple to keep the main flavor.

Corn Tortillas: Corn tortillas crisp and char better for a tostada or a taco but if you are more of a flour tortilla person, by all means, this will still be just as tasty!

Step by step

Start these Pineapple Shrimp Tostadas by adding all of your Pineapple Sauce ingredients into your blender. Blend until the sauce is smooth. Next go ahead and chop up your garlic, red onion, and green onion. Take a large saute pan and place it over medium heat. Add your two table spoons of butter and let melt in the pan. Toss in your garlic and red onion, maybe a pinch of salt as well. Cook for about 3-5 minutes. Your whole house should be fragrant at this point.

Make sure your shrimps are thawed and patted dry and add to the pan with the green onion. Let them cook for minutes mixing every so often. After about 5 minutes pour in your Pineapple Sauce and torn up parsley. Stir the contents of the pan and reduce your flame to low so you have a nice simmer with the Pineapple Sauce. Let cook for about 5 minutes. While they are cooking prepare your corn tortillas and place over a flame to make them nice and crisp. We usually oil a grate on our stove and let the tortilla sit on top to char. Once they are nice and charred remove from the flame. Mix the shrimp, at this point the sauce should be thick and sticking to the shrimp. Take the shrimp off the heat and serve on top of the corn tortilla, enjoy!

Pineapple Shrimp Tostadas

Ingredients

Pineapple Sauce

  • 2 cups cubed pineapple
  • 1 tbsp hosin
  • 1 tbsp chili garlic sauce
  • 2 tsp packed chopped parsley

Tostada Ingredients

  • 2 tbsp butter
  • 2 garlic cloves minced
  • ¼ cup chopped red onion
  • 2 tbsp minced green onion
  • 1 lb deveined and peeled shrimp
  • small corn tortillas
