Prosciutto Wrapped Goat Cheese Chicken

Inspiration

Phillip and I love making beautiful dinners with sauce and garnish, but sometimes that can take up more time than you were planning in the kitchen. We decided we needed a new quick recipe to add to the rotation for those busy nights we don’t necessarily feel like cooking but refuse to order take-out. This recipe has no fancy sauce or garnish, just juicy chicken, salty prosciutto, creamy goat cheese, and a bit of asparagus! Add some seasoning and toss these bad boys on a pan and relax until dinner. We typically make this with a side we can also add to the sheet pan, like additional asparagus with some lemon juice and quartered baby potatoes with a little garlic and olive oil. About 25 minutes later your healthy and filling dinner is ready to be gobbled down!

Tools needed

Sheet Pan: The only tool needed for this recipe is a sheet pan to bake your chicken on, it’s as simple as that.

Ingredients

Chicken Breasts: Juicy and flavorful, chicken breasts are the best option for this recipe.

Prosciutto: Prosciutto is perfect to add a salty taste and it also provides a nice crunch once baked in the oven.

Goat Cheese: This cheese provides a velvety texture and also a creamy flavor to the salty prosciutto.

Asparagus: Asparagus and goat cheese are my favorite spring flavors and the perfect pairing to each other.

Step by step

To start making this Prosciutto Wrapped Goat Cheese Chicken, preheat the oven to 425 degrees. Begin by adding to a bowl or zip lock gallon bag your chicken breasts, olive oil, salt, pepper, onion powder, garlic powder, and paprika. Mix well so the chicken breasts are coated in the seasoning. Lay out two slices of prosciutto for each chicken length-wise side by side but overlapping a little bit. Crumble in about 1 oz of goat cheese, and lay out your cut asparagus over the goat cheese in the opposite direction your have the prosciutto. Typically I add about 5-6 asparagus per prosciutto. Add your chicken in the same direction the asparagus faces.

Wrap the prosciutto around the chicken and overlap. Place wrapped side down on your oiled or non-stick sheet pan. Do this for each chicken breast and bake for 25 minutes. Once the chicken has reached an internal temperature of 165 degrees you are ready to serve and enjoy!
