Quick Pork Lo Mein

COVID has really upped our take-out game. One thing we have definitely kept up is our monthly Pork Lo Mein take out order. We decided to learn and refine our own Quick Pork Lo Mein recipe, because what else are we going to do in quarantine? We have now been making this on repeat to eat hot, cold, room temperature, you name it. Because isn’t Chinese food the best at any temperature! So make a big batch and enjoy eating this Quick Pork Lo Mein all week long! This will be your new go-to Chinese take out meal.

Pork Lo Mein

Ingredients

Lo Mein Sauce

  • cup soy sauce
  • 4 cloves garlic minced
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 1 tbsp sesame oil
  • 4 tbsp brown sugar
  • 2 tbsp fish sauce
  • ½ tbsp rice wine vinegar

Pork Lo Mein

  • 2 pork chops sliced thinly
  • 1 carrot julienned
  • 1/2 yellow onion sliced thinly
  • 1 cup snap or snow peas
  • 1 cup broccoli florets
  • 3 green onions chopped
  • 1 package lo mein noodles
  • 3 tbsp canola oil
  • 1 tbsp sesame oil
  • 3 cloves garlic minced
  • 1 tbsp ginger grated or powdered

Instructions

Lo Mein Sauce

  • In a small sauce pan add sesame oil and garlic over medium heat
  • Once fragrant add soy sauce, fish sauce, and rice wine vinegar and bring to simmer
  • Slowly add in the brown sugar and continue to whisk until the sugar has dissolved
  • In a small bowl mix together cornstarch and water then slowly add to the sauce which continuly whisking to avoid any clumping
  • Let sauce simmer another 3-5 minute and take off the heat

Pork Lo Mein

  • Cook lo mein noodles according to directions on package and set aside
  • In a large wok or saute pan add canola oil and sesame oil over medium to high heat
  • Once oil is hot, add garlic and ginger and cook 1-2 minutes
  • Add sliced pork to the hot oil and cook 3-5 minutes or until pork is cooked
  • Throw in all the veggies to the wok and mix well
  • Once the veggies have cooked through but are still holding a firmness slowly pour in your sauce
  • Mix the veggies, pork, and sauce together to make sure everything is coated
  • Little by little add the lo mein noodles to the wok and continue to mix together
  • Remove from heat and serve with extra green onion as a garnish!

One of my favorite parts of Pork Lo Mein is how well the sauce sticks to the noodles. The sauce is soaked up in the noodles and also clings to the noodles like its magnetic. When you eat it cold the next day, it is as if the noodles and sauce have become one. This recipe provides all of that but without the extra greasy feeling. Now, I never said this was the healthiest recipe for Pork Lo Mein you could make, but it is definitely not greasy version.

What kind of veggies should I use?

We decided to use some classic veggies in our Quick Pork Lo Mein like carrots, onions, and broccoli. We decided to also throw in some snow peas to give an extra crunch. The best part of any Lo Mein is that most veggies work well because the sauce really takes. Others that go well are mushrooms, celery, zucchini, and peas. Things that have a strong flavor like brussel sprouts have too strong of a flavor to be incorporated. But feel free to incorporate any kind of veggies you want in this Quick Pork Lo Mein at home take out meal!

    Everyone knows in Chinese or Thai cooking, prep is all the time. Once everything is ready-15 minutes tops. I cooked two batches of sauce to save for next time and glad I did because it was delicious. If you like Chinese at all-put this on top of your list. Be sure and use fresh ginger-made all the difference in the world. I made recipe as is-but you could add other veggies to your taste. A squirt of Shirracha and we were thru 2 helpings in no time. Great!
