Inspiration

We thrive off of chicken nuggets in our house, for lunch, dinner, afternoon snack, even late night snack. There is never a wrong time for nugs. When Phillip and I started dating he would always be surprised when we were finished with dinner to find out all of the hidden veggies included in the dish. Make something so indulgent, healthy, or at least nutritious and still tasty, that is a winner recipe in this house! So we tossed around ideas of a healthier chicken nugget.

We love our Nuggets and Sweet Sauce and could eat them daily, but it’s not a whole dish in my opinion. In order to keep this recipe tasty and veggie filled, we opted for sweet potatoes. If you haven’t tried Sweet Potato Tots before, they are a must try. We knew the combination of chicken and sweet potatoes are a classic so why not take it one step further and make it a combo, Sweet Potato Chicken Tenders or Nuggets if that’s your choosing!

Tools Needed

The only tool you need that you may not have in your kitchen is a kitchen grater. You will use this tool to shred the sweet potatoes.

Ingredients

Ground Chicken: What are chicken tenders without chicken. We chose ground instead of breasts so we could really absorb the sweet potatoes within the nuggets.

Sweet Potatoes: If you don’t enjoy sweet potatoes carrots are a good alternative. But the sweetness really adds a distinct flavor to these Sweet Potato Chicken Tenders you don’t want to miss.

Cinnamon: Sweet potatoes should be sold with cinnamon or nutmeg at stores. There is something so cozy about this combo.

Cayenne Pepper: A little bit of sweet needs a little bit of spice. A bit of cayenne pepper in these nuggets are so tasty, this is not for spice it’s for flavor.

Step by Step

Start making these Sweet Potato Chicken Tenders by preheating the oven or air fryer to 350 degrees. Next start peeling and shredding the sweet potatoes. Once shredded, mix in a bowl with the ground chicken, salt, pepper, cinnamon, cayenne, and one egg. Using your hands or a cookie scoop, scoop up the chicken mix and shape into nuggets or tenders or shapes of your choosing and let rest aside.

In three small bowls, add flour in one, two eggs beaten in another, and lastly the breadcrumbs and seasoning in the third. Roll the chicken in flour, dunk in the egg, and coat in the breadcrumbs. Place on a racked pan or add to the air fryer and cook for 12-15 minutes flipping half way through. The cook time depends on the size of your nuggets or tenders but make sure to cook the chicken to 165 degrees internally before serving with BBQ Sauce.

Sweet Potato Chicken

  • 1 lb ground chicken
  • 1 cup sweet potatoes peeled and shredded
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tsp garlic powder
  • 1 tsp cinnamon
  • 2 tsp cayenne pepper

Breadcrumbs

  • 1 ½ cups panko breadcrumbs
  • 1 tsp salt
  • 1 tsp pepper
  • ½ tsp cinnamon
  • ½ tsp cayenne pepper
  • flour

  • olive oil (for the oven rack)
