Burrito Bowls

Servings 4 people

Ingredients

Ground Turkey

  • 1 ½ lb ground turkey
  • ½ tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ jalapeno chopped

Peppers & Onions

  • ½ red pepper sliced
  • ½ yellow pepper sliced
  • ½ yellow onion sliced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper

Guacamole

  • 3 avocados
  • ½ cup red onion chopped
  • ¼ cup tomatoes with seeds removed and chopped
  • ½ jalapeno chopped
  • 3 cloves garlic minced
  • ¼ cup cilantro chopped
  • 1 lime
  • 1 tsp salt
  • 1 tsp pepper

Other add ons

  • 1 can refried beans
  • 2 cup white or brown rice
  • 4 cups beef broth

Instructions

Rice

  • In pot add beef broth and rice and cook

Ground Turkey

  • In a large skillet add ground turkey and break up
  • Add in seasonings and jalapeños to the the ground turkey and cook
  • Once turkey is cooked drain the grease

Peppers & Onions

  • In a saute pan add olive oil and bring to medium/high heat
  • Add peppers, onions, salt, and pepper and saute until the veggies are wilted and charred
  • Take pan off heat and set aside

Guacamole

  • Chop all veggies and add to a mixing bowl
  • Scoop in avocados and add salt and pepper. Squeeze lime juice into bowl
  • Mix to the chunkiness of your liking

Beans

  • Add refried beans to a bowl and mix until hot

Constructing your Burrito Bowl

  • Add rice to the bottom of the bowl
  • Top with turkey mixture, guacamole, refried beans, peppers & onions
  • Garnish with cilantro and additional jalapeños as desired
