Pesto Salmon Skewers

Ingredients

Mint and Parsley Pesto

  • 1 cup parsley
  • 1 cup pecans
  • ½ cup mint
  • 3 garlic cloves
  • ¾ cup olive oil
  • 1 lemon squeezed

Skewers

  • 1 lb salmon cubed
  • 1 lb baby potatoes
  • 2 lemons sliced
  • 1 zucchini sliced

Instructions

  • Add all pesto ingredients into a blender and blend until smooth
  • Assemble your skewers with salmon, potatoes, lemons, and zucchini
  • Coat the skewers in the pesto
  • Grill for a few minutes on each side or until salmon reaches an internal temperature of 145°
  • Serve with extra pesto sauce on the side
