Watermelon salad with basil dressing

Watermelon Feta Panzanella

Ingredients

  • 2 cup watermelon cubed
  • 1 cup feta cubed
  • 2 slices bread cubed
  • 2 tbsp mint
  • 1-2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper

Balsamic Vinaigrette

  • 2 tbsp olive oil
  • 1 tsp balsamic glaze
  • 2 tbsp water
  • 2 tbsp basil roughly chopped
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 tsp white vinegar

Instructions

  • Preheat oven to 450°
  • Cube the bread and brush with olive oil, salt, and pepper
  • Bake the bread for 10 minutes or until the bread is crisped like croutons
  • In a small jar mix together all balsamic vinaigrette ingredients and let rest for at least 15 minutes
  • Cube watermelon and feta and add to bowl
  • Pick off and activate mint by slapping it and then add to the bowl
  • Add bread to the bowl with the watermelon, feta, and mint
  • Drizzle the balsamic vinaigrette and serve
