Start by chopping, mincing, and grating all of your herbs and vegetables
In a bowl mix together all Garlic Ginger Sauce ingredients and leave to the side until it's needed.
Cook your soba noodles according to the package directions and rinse under cold water once cooked
In a wok over medium heat add your sesame oil. Let cok to heat and add the pork. After the pork is close reaching 145° internal temperature add the onion and bok choy. Cook for a few minutes and add in the Garlic Ginger Sauce and green onion. Continue to cook till the sauce begins to simmer.
Add in the zucchini noodles and mix well with the sauce. Next add in the soba noodles and mix until the sauce is fully coating the noodles. Let cook for another 3-5 minutes and serve!
